In many cities, taxi rates rise at night. Toulouse is no exception but be prepared that night tariffs may be applied from 19:00 till 7:00. It is about 25-30% more expensive to use a taxi during that time. Note that on most days public transport runs till 1:00 — after that, you’ll have little choice!
